Chewy Oatmeal & Raisin Cookies


I love a good healthy revamp of baked goods, but I also love the real thing. This recipe is the best of both worlds! Refined sugar free, full of omega 3s, fibre and could easily be made gluten free by using gluten free oat flour or gluten free flour. I haven't tried to replace the butter to make it vegan but I might try and see how they turn out.


Cookies are great to begin with but even better when you're sick and made them so you don't have to share with anyone else. Score!





Here's the details:

1 1/2 cup oats

1/2 cup whole wheat flour

1 tsp baking powder

1 tsp baking soda

1 tsp himalayan salt

1 tbsp cinnamon

1 tsp vanilla

1/3 cup room temp. grass-fed butter

1/4-1/2 cup coconut sugar

1 chia seed egg (1 tbsp chia seeds & 2 tbsp water. mix and let sit 2 minutes)

3/4 cup raisins

1/3 cup flax seeds (preferably ground because nutrients in whole seeds don't get absorbed;1/4 cup if using ground)


1. Preheat oven to 350 and line baking sheet with parchment paper

2. Mix the butter and sugar with a hand mixer until fluffy then add chia egg, cinnamon and vanilla. Mix until smooth

3. Add in oats, flour, salt, baking powder and baking soda. Mix with a spatula until almost all combined then add in raisins and flax seeds

4. Scoop out about 2 tbsp worth of dough, form into a ball then slightly flatten. You should get around 12

5. Bake cookies for 14 minutes for the perfect chewy texture. Try to let them cool for 10 minutes before diving in
